Yes it is fine to have sponge filters as the only filter. Almost all my shrimp tanks are run solely on sponge filters.

Don't try to take the eggs off the mother, its really hard to do. They are attached with this jelly like stuff that is very difficult to get off even if the shrimp is dead . If the eggs are dropped they are probably not fertile or something else was wrong with them. Just relax and let nature take it...
