You will see some empty shells in a tank once in a while, that's completely normal. As long as the rest of your population behaves normally (i.e. grazing algae etc.) there is nothing to worry about. Snails die, and new snails are born.

The snails are substrate burrowers and can also be very nocturnal, so you won't see them as often until their numbers increase. But rest assured that they are doing their jobs, a large part of which is to eat all the gunk in the substrate.

Yeah, leave the rocks and algae alone. They are actually good for your tank. They will be a continuous food supply for the shrimp and snails. Yes, driftwood is a not appropriate for Supershrimp tanks. Also, if that "mossball" is a marimo ball from the pet store, it will just rot slowly over time (and before that it usually becomes hair algae infested). If so, I'd take it out.
