I've noticed the same thing; our shrimp are very active when the weather is hot, and almost completely dormant when it's cold.
We have two lava rocks which fit together almost as if they were one rock with a crack down the middle, and when it's cold they all hide in there.

Boiling or baking rocks is dangerous, because on rare occassions, heated rocks can explode. It's unlikely, but if it happens it can ruin your kitchen or even kill you. I would never ever do it. Since your rocks are from land, they're unlikely to have any life forms which can harm your shrimp. The ma...

Is the shrimp red, or is that just the lighting or background? Its shape looks to me like a ghost shrimp, but I'm not sure. Maybe a few more pictures would help?

Yes, unfortunately, I think that you will still need to feed them, although much less than you fed your fish. I don't know about the leaves, sorry.

Yes, you should definitely keep the water they came in. It contains useful microbes and microscopic algae. If you want more water, in order to put them in a bigger container, then you can make "brackish" water by mixing salt water and distilled or RO fresh water (50/50). However, after you...

No, Amano shrimp need to live in fresh water to be healthy.
(Amano shrimp live in rivers. Their larvae float down the river to the ocean and grow in salt water for a month or two, but once they grow out of their larval stage, they need to swim back up river into fresh water, or else they will die.)
