I think Mustafa tends to send younger shrimp, so they may get a bit bigger. But yeah, even the biggest ones will be notably smaller than cherry shrimp. They should color up over time.

They have sexes, the main way to tell a female is that when mature they often have a dark mass in their body (developing eggs). As for coloring, they tend to darken as they acclimate to a new environment (getting pale when stressed), though color can also change with age/over time.

Well its taken a long time, but I'm finally seeing some baby snails. Over time I've also uncovered a fair amount of dead or semi-dead algae that formed under the sand (but where light could still reach against the glass) from when the tank was freshwater. Perhaps that was causing the snails problems...

Generally once you have algae it should be fine. No need to do a water change unless the shrimp start acting sick.

Pretty sure they're Tarebia. I'm no expert, but most pictures of Melanoides I've seen look like they have skinnier shells, often with some kind of patterning.

If I were you I'd gently mix it. These shrimp seem happiest foraging on surfaces, so it'd be good if they have access to the bottom.

You also will likely rarely see the babies right after metamorphosis, as they tend to hide and also tend to be very still. But once they (I presume) molt once more, they will begin acting just like the adult shrimp despite still being far smaller.

Yeah, you may want to add a good top if you want to avoid rapid evaporation, as well as offer some protection from potential contamination.

Another thing to keep in mind is that its not unusual for first time super shrimp moms to drop all or most of their eggs. So don't worry if it does happen, she'll do better next time.

Even if you see no algae, feeding that often would be a mistake I think. Every three weeks or so would be better, and no more than what it takes the shrimp a few hours to fully consume. That said, I started with 20 in a five gallon tank and had no issues with them hiding. Supershrimp tend to be very outgoing.

Can't say I've seen anything like that myself, I can only assume something about or on the sea fan is very interesting/tasty to that particular shrimp.

New water is better than none I would say. One shrimp and a few snails have a minuscule bioload anyway. But I'm not sure what you mean regarding the options. That is I assume you would be keeping it in another bowl while cycling the second new bowl you mentioned.
