If it feels like sand, i.e. hard to the touch, then it's probably just some white sand particles mixed in with the substrate. Happens. Not sure why they would turn black outside the water, though.

The algea in some places has morphed into what looks like hair algea, so I may have both. I've done bleach treatment twice, once for all the rocks and once on the original castle. The macroalgae can become thinner and lighter colored under strong light and low nutrient conditions. Then it resembles...

I don't think this stuff roots but I feel like it might be trying to take hold of the gravel a little. It doesn't root but it has some mechanism to hold on to small sand particles and gravel/rocks somehow. It's also pretty random, so you can't just tie a piece to a rock and hope that it covers it. ...

I hope you chose the hex tank. Much better for the shrimp in the long run, and much easier to maintain. They need a large bottom area and the other container has almost none.

These shrimp don't need or want that much additional food at all. There is plenty food growing in the tank at all times. They need maybe a tiny flake of food every few months. Just keep things simple and follow the "when in doubt don't feed" advice and you'll do fine in the future.

For me the most surprising things in my tanks are the different color mutations I discover once in a while. For example, I just discovered a white female with snow-white eggs in her ovaries. She'll look very interesting once she starts carrying those eggs.

You can remove most of it and leave a small portion. Just make sure to not remove shrimp with it as some shrimp tend to cling to the macroalgae for dear life, especially after molting. As for more shrimp, if you can wait for your shrimp to reproduce and fill up a tank, then there is no need for more...
