Hi. I have had ghost shrimp before and I always see them with green eggs in their body.. but i have always wondered if they are fertilized or not?
Since crayfish has sex to show that there is some sort of fertilization occuring, do shrimps do the same thing as crayfish?

Yes, shrimp mate, but it isn't always obvious. Normally you'll see the males zooming around the tank, but the female is usually hiding, so the actual mating is normally not observed.

I guess in my old tank, the shrimps never had a chance to survive.
too many tetras and guppies and plecos =P.

Most plecos are OK, but tetras and guppies like a shrimp dinner now & then, especially babies.
