From what I've gathered so far, a 10 gallon tank would be quite sufficient for a pair. I'm thinking crushed coral substrate to maintain pH and hardness. (Works very well for my cherry shrimp.)
Hair algae to absorb nitrates between partial water changes, as well as food for the crayfish.
Established sponge filter for cycling ammonia, etc. Would a small hob filter be better? Do they prefer more, or less water circulation/current?
Heater set low, no higher than 72, or would it even be necessary? (House/room temp in winter doesn't get too much lower than 70.)
What, how much, and how often to feed?
Anything I'm overlooking?
