1 white eye
He used to have 2 black eyes for sure now he has one white? Anyone see anything like this before?

I wonder if it's a molt thing too. I couldn't find any info on opaeula eyes turning white but I read it can happen to fresh water shrimp before a molt sometimes I know they're vastly different shrimp but hopefully it's something similar

I will always defer to experts, but they aren't "vastly different" from the little freshwater shrimp as they are in the same phylogenetic family. It makes them second cousins or thereabouts. So you can more or less extrapolate from what you might see in Neocaridina/Caridina freshwater shrimp, just not always directly. I'd like to know if your white-eye shrimpy molts soon or not, it would be interesting to know if that were a similar indicator.

Currently he still has 1 white and seems to be doing just fine though I'll definitely update with any new info

It actually looks like the eye is missing I have no idea what could have happened

Probably got damaged/infected somehow and fell off. Their eyesight is not very good anyway, so I doubt that will affect it much.
