Thanks for the update and the good news :) Looks like she is a tough little shrimp and I hope she recovers fully.

If you still see eggs she has not molted yet. The eggs are all attached to the outside of the body and would not remain when she sheds her exoskeleton. She might have just decided to drop the fungused eggs for now. When she molts there should be nothing left of the fungus unless the fungus ate right through her exoskeleton into her tissue.

if that were the case wouldn't it be safer to sterilize the entire tank in case such a fungus was contagious and possible to be spread to othe tanks?

Fungus doesn't spread like a disease, it's actually a secondary infection (generally affects injured or dead tissue).
