What a nice discovery Collards was! I bought some Briggs egg clutches and the gal that sold them to me said to feed the snails collards. She said the only thing they like better is dandelion leaves.

I took a cup full of leaves and zapped them in the microwave for 2 minutes, then froze them flat in a gallon baggie. As I need some I break off a chunk about 3" square, thaw it out and toss it in the water.

The sanils are on it in under a minute and the shrimp arrive to share. After an hour or so there is nothing left but what looks like a druken Briggs and some very happy shrimp. They pick over the tiny scraps for a while. Collard appears to be one of those overlooked superfoods.

For myself, I cook it up in chicken broth with a little turkey bacon. Everyone is happy!

These are supposed to be THE superfood. People should eat them too. Good for the eyes too and hight in iron and trace minerals.

To prepare for freezing blanch (bring water to a boil and dump in the greens for 2 minutes) then drain & freeze. Best is to freeze in very thin layers so you can just break off a little when you need it. The combo of blanching & freezing make the leaf easy for what ever wants it to eat.

You can microwave rather than blanch, but you need to experiment with the power & the time.
