Collard Greens

What a nice discovery Collards was! I bought some Briggs egg clutches and the gal that sold them to me said to feed the snails collards. She said the only thing they like better is dandelion leaves.
I took a cup full of leaves and zapped them in the microwave for 2 minutes, then froze them flat in a gallon baggie. As I need some I break off a chunk about 3" square, thaw it out and toss it in the water.
The sanils are on it in under a minute and the shrimp arrive to share. After an hour or so there is nothing left but what looks like a druken Briggs and some very happy shrimp. They pick over the tiny scraps for a while. Collard appears to be one of those overlooked superfoods.
For myself, I cook it up in chicken broth with a little turkey bacon. Everyone is happy!
