Red Nose Shrimp

Hey guys.
I've lurked for awhile and just got my shrimp today so I figured it's about time to join eh?
I got 4 red cherries(which stayed a beautiful red even after being brought home)and 2 red nose shrimp. I would of got a few more cherries instead but they are out until after Christmas cause of me allready heh. The cherries seem to have inhabitated my sunken ship

Here's my question. Would a red nose shrimp female and male both have red noses? I noticed when they got home only one has the long red nose. The both look fairly similar and both have the same type of markings on their tail from what I've observed so far. I haven't got a great look of both of them close together yet though...
One other question
, one of my RCS seems to like riding one of my apple snails backs. He went slightly above the water while on the shell. Is this okay for shrimp? I'd imagine they'd jump back in if there was a problem. He's decided to go back under water level for now at least lol. Last thing, what should I be feeding them? I only have one live plant(Moss ball)in right now and two fake ones. I hear ghost shrimp like blood worms(which I have lots of for my african dwarf frogs in a different tank)but not sure about the ones I have.
