tank size

from looking around everyone seems to be talking about tanks 20 gallons or under for their dhrimp tanks. I have a 55 that is sitting empty and was thinking of making that a red cherry farm. I have someone that is going to sell me about two dozen cherry reds in a few weeks after i get it set up and cycled. I plan on using mainly rooted plants and java moss so I don't have to keep up a heavy fert regiment. Should everything work out ok in a tank that size?
