This is what I have done before, to set up a new tank and had no problems.
Clean your new gravel ,Very well, to get rid of all the fine particles.
Using of coarse

Dechlorinated Water

and put it in the new tank and add Dechlorinated water.
Put your new heater in to bring it up to proper temp.
Put your new filter in the tank.
Is it going to be a hang on filter, or, sponge filter ?
If it is going to be a hang on the back filter like the old one,
Squeeze the foam into the new filter for Bacteria.
If it is a air driven foam filter , just squeeze it into the water
Vaccum out the Gravel from the 10 gal.
Put a small amount of what you take out and put it in the new tank Then refill the tank.
Over the next couple of day. take some of the old gravel from the 10 gallon and put in the new tank.
I do a 10% water change each day in the old tank. Putting that water in the new tank.
When you take your prawn and put it in the new tank, I would use the old filter for aleast a week in the new tank.
To help with the Bacteria transfer.
Take it for what it is worth.
This, I have done in the past and have had no problem.
