I haven't found any posts on the forum concerning keeping Mexican and Cajun crayfish together. Has anyone tried it?
Are the Cajuns more aggressive than C. patzcuarensis?
Would interbreeding be possible or likely?

Interbreeding is likely to happen. They will coexists as I have put some baby cajuns with some orange dwarfs.

The current Cambarellus "family tree" places the cajun in its own sub-genus, the Mexican group in another sub-genus, and the rest of the U.S. species in another.
Based only upon the anatomical differences between the three groups, the cajun would be the least likely to interbreed with any other species.
In general, it would be best to keep Mexican species separated from each other and non-cajun U.S. species separated from each other.
But I'll repeat that this is only an educated guess based upon taxonomy and subtle differences in the anatomy of the reproductive structures.
