Aside from water quality, I have found they do better at lower temps (~22 C). Mine are in a 30 long with hundreds of shrimp and snails. The snails are great for cleanup and algae control, but the shrimp move and breed much faster, quite a lot of competition for food for the little ones. If I were starting the tank out fresh I'd leave out the shrimp.
It's also very difficult to spot baby crayfish among hundreds of baby shrimp.
