I know that the shrimp won't eat their young, but I have some fish in the tank too. A few platys and I know its not the best to have fish with the shrimp so I'm planning on moving the fish to another tank.

I see. Yes, optimally you don't want the fish in there. But, suboptimally, tons of moss would definitely help hide shrimp young from fish and slowly build up your population.
