will different color variation breed with one another? and will they produce a different color? i like to keep it pure green or pure purple.

The green shrimp stays green when it is feeling healthy. It mostly changes coloration (i.e. more reddish) when the water parameters are not quite right. Those shrimp are all still the same "green shrimp" and the offspring will also stay green. There is no "pink" green shrimp.
