I'm just curious if anyone knows why the orange opae shrimp are so much more expensive? Are they very rare?

Yes rare. You don't see that color available or for sale other than here on PS

If you look for the thread, getting a breeding colony established has been a mupltiple year endeavour. These guys do not multiply very quickly compared to most shrimp.
