Do the Red Cherry Shrimp Females gaurd the eggs after they have laid them? Do they typically lay in them in a hard-to-find spot?

Actually not. Because the eggs 'almost immediately' become little shrimps right after birth!

The female will "implant" her eggs under her tail and carrying them around until they hatch and are ready to go off on their own. Then she'll gently fan the tiny babies and they will start living on their own. She doesn't lay her eggs anywhere in the tank since the eggs need to be fanned to keep them from turning bad. Mustafa, don't you have an article about Red Cherry breeding on your website?
