I would like to paint rocks etc... and was wondering if anyone would know if there's a paint out there I should look for that once it's dry is safe for our shrimp tanks.

Hi Jill,
Although I'm far from an experienced shrimp keeper (just started, in fact), I've kept fish for years and would never intentionally put paint of any kind into my tank or pond. That said, people have used Krylon Fusion in aquariums with fish...but we know shrimp are hyper-sensitive by comparison. I know that likely isn't much help, but better safe than sorry IMO...

Don't do it, I've heard that shrimp die quite easily when exposed to toxins you may kill them
