i have 2 cherry shrimps with yellow backs...ive read that is there ovaries...does yellow mean the eggs that come out will be fertilized??

You would need a male to fertilize the eggs.

Do you only have two cherries? You should get more. Then the eggs will become fertilized.

i have 5 as of right now 2 are clearly females, withe yellow ovaries the other 3 i am not quite sure yet, the are really red...yet no ovaries

If they are very red, they are probably female.
If they have a stripe down their back they are probably female.
The saddle thing you dont see all the time on females, and I think it's just when they are ready to mate/have eggs that you see it.
