Anyone know why my big blue prawn blows out non-stop clouds of smoke from its mouth? It leaves behind a layer of dust when it clears. It's not the first time I've seen this.

Mine don't blow smoke, but I'm wondering what sort of substrate you have. Mine are constantly chewing the sand and spitting it back out. If your substrate is fine enough, they may be blowing that out.
Either that or they have indegestion. Shrimp burps are really horrendous!
Just normal coated gravel from the store and river rocks I collected and boiled clean. I heard they chew on rocks and sand to help with digestion, so maybe after it's done, it spits it back out.
