It's been about 5 months, since March. Maybe it is about time for him to molt.
Yeah, I use to feed him everything, from meat to vegetables to fish food to wafer, then he got picky and would only eat wafers, that was a few months ago.

I have an adult 16"+ M. Rosenbergii. For weeks now he hasn't been eating the usual diet of algae wafers i've been throwing in, or anything i've tried to feed him. He usually goes nuts when i toss in food, now I would just net it back out. Yet, he has been pooping non-stop (like a large pleco). ...

If you're cooling the tank through water evaporation, you might want to use only reverse osmosis/deionized water to top off the tank.
